Extra Virgin Olive Oil Ice CreamIngredients:
250 ml Extra Virgin Olive Oil
10 eggs
300 grams of sugar
1/2 liter of liquid cream
Preparation
Separate the yolks from the eggs.
To the yolks you have to add 100 grams of sugar and 200g to the egg whites. Beat everything separately.
Both mixtures must be left to rest.
Then mount the cream and we also reserve it.
The most important task comes now.
Take the blender and beat the yolks again and progressively you will have to add the rest of the ingredients to the mix. While using the blender, add the white eggs and sugar mixture and then the whipped cream.
Once the mixture is homogenized, add the olive oil little by little while continue blending. Do not pour the oil all at once, do it little by little or the ice cream will not go well.
Once you have finished adding the extra virgin olive oil, keep mixing the ingredients, but from now on, with your hand trying to avoid the lumps.
When you get a uniform mixture, put it in a container and put it in the freezer In a few hours the ice cream will be ready to serve and savor.
Extra virgin olive oil recommended:
Arbequina olive oils are normally aromatic oils with a mild bitter and spicy taste, they are ideal for this recipe, as they provide a fresh aroma and a silky texture without the presence of strong olive oil flavors.
In ready made ice creams, you can also try our Joana de Cardona, an almost sweet extra virgin olive oil of the corbella variety that will perfectly combine with strawberry and other red fruit ice creams.
