Anchovies are a true Spanish delicacy, valued for their craftsmanship, flavor, and origin. In Spain, two exceptional varieties stand out: L’Escala anchovies from the Mediterranean Sea and Santoña anchovies from the Cantabrian Sea.
The warmer Mediterranean waters give L’Escala anchovies a lower fat content and delicate, subtle flavor notes. In contrast, the cold and energetic Cantabrian Sea, together with the long natural journeys of the fish, produces Santoña anchovies with a firmer texture and a more intense profile.

Anchovies, a semi-preserved fish that has become one of the most sought-after delicacies in its own right.
In Spain we are lucky to have two different types and both of extraordinary quality:
the anchovies from L'Escala and the anchovies from Santoña, that is, the anchovies from the Mediterranean Sea and the anchovies from the Cantabrian Sea.
The warm Mediterranean waters provide the L'Escala anchovy with a lower amount of fat.
While the liveliness and cold of the Cantabrian Sea, added to the long journeys in the life cycle of the fish, offer an anchovy with a more firm texture.
Nutrients available for the fish in both seas are different, and that provides different subtle flavor notes to each anchovies.
Commercial presentation may also be different as Santoña Anchovies are always found in oil and ready to eat, while Mediterranean Anchovies can be found also in the original brine, they need to be desalted, but consumer can then decide on the level of salinity to his liking.
Finally the Price. Cantabric sea Anchovies have the reputation that comes at a price. Mediterranean anchovies are more humble in this respect.

Las anchoas, un pescado en semiconserva que se ha convertido por sí solo en uno de los manjares más demandados.
En España tenemos la suerte de contar con dos tipos diferentes y ambos de una calidad extraordinaria:
las anchoas de L'Escala y las anchoas de Santoña, es decir, las anchoas del mar Mediterráneo y las anchoas del Mar Cantábrico
Las cálidas aguas del Mediterráneo aportan a la anchoa de L'Escala una menor cantidad de grasa.
Mientras que la vivacidad y el frío del Cantábrico, sumado a los largos recorridos en el ciclo vital del pescado, ofrecen una anchoa con una textura más firme.
Los nutrientes disponibles para los peces en ambos mares son diferentes, y eso proporciona diferentes notas de sabor sutiles a cada anchoa.
La Presentación Comercial también puede ser diferente ya que las Anchoas de Santoña siempre se encuentran en aceite y listas para comer, mientras que las Anchoas del Mediterráneo las podemos encontrar también en la salmuera original, necesitan ser desaldas; pero el consumidor puede entonces decidir el nivel de salinidad a su gusto.
Finalmente el Precio. Las Anchoas del Cantábrico tienen la ya su merecida fama. Las anchoas del Mediterráneo son más humildes en este sentido.
