Piquillo peppers, pronounced pee-kee-yo, are small Spanish red peppers appreciated for their naturally sweet flavour, tender texture and distinctive triangular shape. Their name means "little beak", inspired by the characteristic pointed tip of the pepper.
Rather than being eaten fresh, piquillo peppers are traditionally roasted until their flavour becomes deeper and more aromatic. They are then carefully peeled and prepared for preserving. This process gives them their characteristic chargrilled notes while maintaining their delicate flesh and vibrant red colour.
Piquillo peppers require very little preparation. Serve them directly from the jar with extra virgin olive oil, sliced garlic and a touch of sea salt for a simple Spanish appetiser. Their mild sweetness also works beautifully alongside anchovies, tuna, preserved seafood, artisan cheese and Mediterranean vegetables.
They can be served cold, at room temperature or gently warmed, making them a versatile ingredient for tapas, salads, sharing platters and elegant starters.
Stuffed piquillo peppers are one of the most popular ways to enjoy them in Spain. Their compact size, soft flesh and natural sweetness make them ideal for holding rich and savoury fillings.
